There's just something about the smell of a pumpkin in the oven.
It's probably because it takes me back to my childhood...right after lighting a freshly carved pumpkin, the candle would burn the tops and that lovely Halloween scent would waft through the air.
I get that same feeling from this pumpkin dinner. Only this time, I can eat the pumpkin.
Pumpkin's a squash, so why not cook it up and eat it.
